Tofu Stir-fried with Thai Basil
Years ago, we went to Thailand for our family holiday and it was one of the best times we ever had! Not only we enjoyed the beach, the weather, the company of nice people, but also the food! For years, I was longing to do a Thai Cooking course, and finally I did it during our stay. It was so worthy it! I had so much fun preparing, cooking and most of all, eating the food. I just loved the smell of the ingredients, kaffir leaves, limes, Thai basil, lemongrass, coconut, and etc. Now, I would like to share with you one of my favorite dishes: stir-fried tofu with Thai basil (holy basil). It is an adapted vegetarian version of Phad Gra Pao (stir-fried pork with Thai basil), one of the most popular dishes in Thailand. What you'll need:
200-250 g firm tofu, use hands or a fork, to break the tofu into crumbles
3 cloves of garlic, peeled
2-6 red bird's eye chillies, seeds removed (depend on your tolerance to spiciness)
1 handful of Thai basil leaves, cut into thin slices
1.5 tbsp coconut oil
1 tbsp fish sauce
2 tsp oyster sauce
2 tsp soya sauce
sprinkle of white pepper
2 medium sized Romanian salad leaves (around size of your hand)
How it's made:
1. Smash garlic and chillies in a mortar with pestle. Or finely chop garlic and chilies.
2. Heat the coconut oil in a frying pan until hot, and then add garlic and chilies mixture. Stir constantly until fragrant. Watch out not to burn the mixture.
3. Add tofu crumbles into the pan with a sprinkle of white pepper. Stir it well and cook over medium high heat for 3-4 mins.
4. Add fish sauce, oyster sauce, soya sauce and mix well.
5. When the mixture is almost dry, add Thai basil leaves and combine well.
6. Carefully divide the mixture onto Romanian salad leaves and serve.
