Heart Waffles for Valentine's Day

Hearty Waffles

For those who have been following my Instagram (@lumadeline) for a while, you know how much my family and I enjoy waffles on the weekends. This is definitely one of our favorite breakfasts. Its hearty shape makes also a perfect for a breakfast on the upcoming Valentine's day, which is a Sunday. I can't think of a better way to start your Valentine's Sunday with these delicious waffles in bed with your loved ones.

Many of you also have asked me which waffles iron I use. Here are some of my suggestions:

  1. Skeppshult Waffle Iron: beautiful, high-quality cast iron waffle maker, great for waffles and photos. ;-)

  3. Electrical Waffle Maker (Germany)

(Serve 2-3)

What you'll need:

  • 125 g good quality butter, softened
  • 6 eggs, separated
  • 1 organic orange
  • 200 g gluten-free flour (or regular flour)
  • 150 g Greek Yoghurt
  • 1/2 tsp vanilla essence
  • Pinch of salt
  • 80 g sugar (optional)

How it's made:

  1. Switch on the oven to 50 °C.
  2. In a medium mixing bowl, whisk butter and egg yolks together for 5 mins until it is light and creamy. 
  3. Grate the orange skin into the mixing bowl. Cut the orange in half and squeeze orange juice out and add to the mixing bowl. Then add Greek yoghurt and flour into the mixture and mix another min or two.
  4. Wash the whisks thoroughly and then whisk the egg white with a pinch of salt, until stiff peaks formed. 
  5. Fold the egg white gently into the egg butter mixture until it is well combined. 
  6. Brush some melted butter over heated heart shaped waffle maker, then add 2-3 tbsp batter into the waffle maker and spread the batter evenly. Bake the waffle until both side are lightly brown. Repeat this step until all the batter is used up.
  7. Put the finished waffles in the oven to keep them warm before serving. Serve warm with blueberry compote (recipe below),  Greek yoghurt and almond flakes.
  8. Suggested toppings: Berry compote, Greek yoghurt, maple syrup, berries, dark chocolate sauce, and nuts & seeds.

Blueberry Compote:

  • 1 cup of frozen blueberry
  • 4 tbsp maple syrup
  • 1/2 tsp vanilla essence

Put all ingredients in a saucepan, cover and heat it over medium low heat for about 10-15 mins or until compote is thickened. Serve warm.
